Strawberry Lemon Icebox (But You Still Have To Bake It) Pie

You would think a recipe called "Strawberry Lemon Icebox Pie" would require no baking. But...alas, it does. Which is why I changed the name. This dessert takes some time but it's worth it.

“We must have a pie. Stress cannot exist in the presence of a pie.” ~David Mamet   For this week's column I wanted to make something with strawberries. Strawberries are so bright, juicy and sweet this time of year that they just scream "Summertime!" After poring over my cookbooks and magazines I found a recipe that combined the tartness of lemon with the sweetness of strawberries, together in one of my husband's very favorite things in the world: pie. Since it's Father's Day, I thought a pie was definitely in order. Especially an "icebox pie" that I wouldn't have to bake. (A talent for baking I do not posess, as I have spoken of in columns past-but this was less about baking and more about me being short on time.) So I gathered my …

A Trifle Fit For a Queen

Looking to make a crowd pleasing dessert for your next gathering? Look no further. This easy to make trifle is sure to satisfy everyone's sweet tooth.

"It would be spiteful to put a Jellyfish in a trifle." ~Karl Pilkington I love my trifle bowl but don't often get to use it, so I typically offer to make a dessert when invited to a party. So when Mother's Day rolled around last weekend I knew I would have to make a trifle. The trifle I make is some combination of cake, chocolate, crushed candy bar and whipped cream but I wanted to try something a little different. I stumbled upon a recipe that used the standard cake and candy but to add a new note of flavor instant coffee was added to the mix. The grocery store had hazelnut instant coffee on sale so I chose that instead of regular, substitued vanilla pudding for chocolate and in lieu of yellow cake I bought pound cake. Spring Strawberries and Cream on Biscuits

Pair fresh strawberries with sugar, cream and buttermilk biscuits for a delicious Spring dessert.

They are much smaller than the berries you get at the supermarket but they are sweeter and tastier. I immediately began to crave strawberry shortcake. I stopped at the market and found some nice red ripe strawberries but there were no packages of shortcakes in sight. I thought about making my own (nah, too lazy). I looked at the angel food cake (nah, not one of my favorites). Then I wandered over to get the cream and there was my answer...buttermilk biscuits.
