Rise and Shine Morning Glory Bread

This bread tastes so good that it's hard to believe it is so easy to make.

Around Christmastime a coworker of mine brought in an amazing homemade bread to share with us. It was sweet and dense and had carrots in it, so I knew it was super good for me. Right. Well, it was so delicious that I had two pieces (ok, maybe three). So when it came time to make something for a day with the ladies I thought this would be just the thing. I'm bringing it today-hopefully the loaf will make it out of my kitchen.

There are lots of recipes for Morning Glory bread out there-you can find both low-carb and low-fat versions, and recipes using different fruits-pineapple, apple or pear are popular choices. I chose to add raisins to mine. However you decide to make it, you'll love it.

Morning Glory Bread

Ingredients:

  • 1 1/2 cups flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 2 very ripe bananas
  • 2 eggs
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 1/2 cup vegetable oil, or melted butter
  • 2 carrots, grated (should be about 3/4 cup)
  • 1 cup chopped walnuts
  • 1/2 cup shredded coconut
  • handful of raisins (optional)

Instructions:

  • Preheat the oven to 350°F.
  • Spray an 8x8 square pan with cooking spray then line the bottom with parchment paper (or aluminum foil like I did-I had no parchment paper). Spray the parchment paper with cooking spray too.
  • Combine flour, salt, baking powder, baking soda and cinnamon in a bowl. Set aside.
  • Mash bananas in another bowl, leaving some chunks.
  • Add eggs, sugar, oil and vanilla, and stir well.
  • Add dry ingredients to wet.
  • When almost combined, mix in carrots, walnuts, coconut and raisins (don't over mix).
  • Pour the batter into the prepared pan.
  • Bake at 350 for about 45 minutes, checking at the 30 minute mark. (You'll know it's done when a toothpick inserted comes out clean.)
  • Cut and serve warm.
